Today I finished the text for my first cookbook (Gourmet Cooking on a Budget) and felt it was time to join the ranks of bloggers. Likely this will evolve into "what I cooked for dinner tonight" as the energy I have to write witty prose is quite diminished after putting 2 reluctant children to bed and then facing the sink full of dishes (we put the dishwasher on freecycle.com 2 weeks ago; good riddance).
Tonight, I was inspired by a cooking class I took (yes, you read that right) with a woman who pretty much packed a bottle of olive oil and some celtic sea salt and then just cooked a basket full of vegetables from the farm we were stationed at (Brook Farm, New Paltz NY). Roasted beets and yellow squash as I have never, so simply, enjoyed it. Soft (baby's butt kind of soft) Panzanella brand mozzarella (from The Big Cheese in Rosendale) with heavy juicy tomatoes and basil. Why is the food out of someone else's kitchen so much more dreamy than my own? I could have eaten forever.
So tonight, I roasted a spaghetti squash and didn't even bother to dress it with butter or salt. Just scraped it out of the shell and topped with seasoned black beans (canned, with oregano, smoked paprika, garlic, and thinly sliced zucchini). Served with red quinoa with 2 tablespoons of grass-fed ghee ($20! from last night's cooking instructor), which has a terrific nutty richness that goes very well with the quinoa. Dollop of sour cream, of course, on top. Even Esther loved it, and Henry loves everything.
