Fried Rice!


It is 11:45am and I am starving. Fridge holds: leftover brown rice, duck eggs from the market, half package baby spinach, and carrot coins uneaten from Esther's lunch last Friday. Fried rice for lunch!
Heat 1 tablespoon olive oil and 1 tablespoon dark sesame oil in a nonstick pan. Add minced fresh ginger and carrot coins (also tossed in a diced unripe pear I accidentally cut into for breakfast this morning...totally inedible raw but acted almost like water chestnuts here, but very optional) and cook until soft, about 4 minutes. You can use garlic if you don't have ginger, just add it after the carrots are soft for about 1 minute, so it doesn't burn. Toss in several handfuls of the spinach and cook until wilted. Crack 2 eggs directly into the hot skillet and beat up with your cook utensil until it is broken up. Add 2 cups cooked rice and toss together until it is one jumbley hot dish. Add 1 tablespoon soy sauce at the end. Eat!
I am dying to make this as a last minute meal for dinner but I will have to call it Eggy Rice or it won't fly.
